Yellow Rice and Chicken

2 c. long grain rice
2 or 3 packets Vigo yellow seasoning powder or Bijol. (Depending on how yellow you want it)
4 cups chicken broth
Olive oil
1 sm can tomato sauce
1 whole cut up chicken
1 lb. chorizo
2 TB. Salt
1 TB. pepper
1 medium onion (diced)
1/4 green pepper (diced)
1 lg. Bay leaf
1 Tb. Minced garlic
ĺ c. diced pimento
1 can or 1 box frozen peas

In a large paella pan or large Dutch oven, brown chicken on all sides in a little olive oil, when just about done, add chorizo and cook through. Cover with lid during this browning process, so itíll cook all the way through.
Add tomato sauce onions, green pepper, garlic, and bay leaf; stir till onions are almost clear.
Add rice, broth and yellow powder, stir and bring to a boil.
Turn down heat to low, cover and cook for 1 hr. (DO NOT LIFT LID TILL DONE!!!!)
Toss rice, add thawed out peas and pimento.

Serve with Black beans.
