1 whole cut up chicken
1 can tomatoe sauce
1 can tomatoes (slightly smashed)
1 large diced onion
1/2 diced green pepper
1 tbs. minced garlic
1/2 cup capers
1/2 cup olives
1 large bay leaf
salt/pepper to taste
1/4 c. parsely or cilantro
Fry chicken on medium high until skin is brown (its OK if not cooked
all the way at his point)
Add onion, pepper, garlic, bay leaf and continue cooking until onion
begins to clear in color.Add tomatoe sauce and tomatoes, capers and
olives. Salt/pepper to taste.
Cook on high until it just starts to boil, stir, turn heat down to
low, cover and cook for about an hour or until chicken is done.
Sprinkle in parsley or cilanto. Serve over rice.
