Recipe by Margaritaville Cookbook

1 chopped onion     1 -16 oz. can tomato sauce
1/2 chopped sweet pepper 1 small can tomato paste
3 crushed cloves of garlic Hot pepper flakes
Oregano Salt and pepper
1/2 C. olive oil 6-8 crawfish tails

                                

Brown onion, sweet pepper, garlic and oregano in oil until golden.   Add tomato sauce,

past, hot pepper flakes, salt and pepper; bring to a boil.   Cut raw crawfish tails into

bite-size pieces and add to sauce.   Reduce heat, cover and cook for about 1 hour.

May be served over rice.  Can also be made with raw shrimp.
