|1 chopped onion||1 -16 oz. can tomato sauce|
|1/2 chopped sweet pepper||1 small can tomato paste|
|3 crushed cloves of garlic||Hot pepper flakes|
|Oregano||Salt and pepper|
|1/2 C. olive oil||6-8 crawfish tails|
Brown onion, sweet pepper, garlic and oregano in oil until golden. Add tomato sauce,
past, hot pepper flakes, salt and pepper; bring to a boil. Cut raw crawfish tails into
bite-size pieces and add to sauce. Reduce heat, cover and cook for about 1 hour.
May be served over rice. Can also be made with raw shrimp.
