Boiled Shrimp Canapes
1 pound small shrimp
½ cup mayonnaise
2 tablespoons chili sauce
1 teaspoon Worcestershire sauce
2 teaspoons horseradish
¼ cup finely chopped celery
¼ cup finely chopped green pepper
1 egg, hard boiled and diced
2 tablespoons olive oil
1 tablespoon diced chive or onion juice
1 tablespoon finely chopped parsley
Salt and freshly ground pepper to taste
1 teaspoon paprika or to taste
Crackers
Boil the shrimp in salted water for 3-5 minutes just until pink. Drain, cool, shell and de-vein. Add remaining ingredients to the shrimp. Mix and chill. Serve with crackers.
