Hot rum Punch
6 eggs, separated
6 tablespoons sugar syrup (recipe to follow)
1 ¼ cups dark rum
2 tablespoons sugar
2 cups hot milk
Nutmeg
Cinnamon sticks
Whisk egg yolks with sugar syrup until thick and smooth. Pour in rum and hot milk and beat for a few minutes. Whip egg whites with two tablespoons sugar until soft peaks form. Pour milk mixture into hot mugs or goblets and top with egg whites. Sprinkle with nutmeg and add a cinnamon stick to each glass.
Sugar syrup
1 cup granulated sugar
1 cup water
Boil together to make a thick syrup. When cool, store in a tightly covered glass container and refrigerate.
